One of the most commonly used flowers in wedding bouquets, the 150 species of Gypsophila or baby's breath, have multiple other uses. These range from herbal medicine to food, soap, cheese and even ice-cream and make very attractive dried flowers. Multitudes of small white (or pink) flowers cover the many branches that form on each Gypsophila stem, the flower heads varying in size according to the variety. Gypsophila is a relatively low-growing plant, reaching about 45-75cm at maturity. Gypsophila enjoys full to partial sun and dislikes clay but will grow fast in a light, but rich soil.
